I am starting to feel really proud of myself! I have gotten past the first couple of weeks of low carb, and it has gotten SO much easier. My appetite is under control, I have a lot more energy, my blood sugar levels are back where they need to be, my stomach feels flatter, and I haven’t cheated even once!
So this morning I went back to my favorite cream cheese pancakes and coffee (plus my Plexus supplements: Slim and BioCleanse).
I ate my leftover enchiladas again for lunch…I have had them for four days straight, and let’s just say that I don’t want to see them again for a while. That is the bad thing about cooking for just two people…you end up with way too many leftovers!
Two of the snacks I had today were Trader Joe’s Roasted Seaweed Snack and the Sea Salt and Turbinado Sugar Dark Chocolate Almonds. The seaweed is about a carb for the whole package, where’s the almonds are about a carb each. Obviously I limit those to 4-5 after supper, depending on how many carbs I have left for the day.
Since it is the weekend, I made myself a low carb pizza…no crust!! It ended up being around 7 carbs for the whole thing…and yes, I ate it all!!
